Healthy and simple to prepare, these parfait bites are a gentle approach to a successful, relaxing elevation.
Note: This recipe can be enjoyed by the whole family by replacing the medicated granola with regular granola.
Gosh I love these things.
Though I have to admit, I don't love the taste of coconut. But I am really, really trying to and here's why;
The coconut fruit is one of a kind in nutritional content, and had shown to be amongst the healthiest and most versatile foods on the planet. The reasons mainly having to do with fat content. Coconut oil is comprised mostly of saturated fats and three very special, medium-chained fatty acids (MCFAs),
- Caprylic acid
- Lauric acid
- Capric acid
These guys are anti-viral, -fungal, and anti-bacterial fatty acids, and compared to long-chained fatty acids (LCFAs), with sources including olive oil, soybean oil, fish, nuts, avocado and meats, MCFAs are easier to digest and not readily stored in fat cells.
Coconut oil also contains saturated fats (which are LCFAs), which lower 'bad' cholesterol (known as LDL) by converting it into the 'good' cholesterol (known as HDL). SO the unique combination of rich, complex fatty acids, coconut oil is a healthy source of energy and a great heart protector. Superb!
Back to the bites. The reason I love these so much is that they are easy to prepare and take very little skill in the kitchen. I've made them both medicated and unmedicated, since these are also perfect for children. However, I recommend making these batches at separate times to avoid any confusion.
Before making them, you'll need to first prepare your Whole Plant Hemp Granola Mix.
Once prepped, line a 12-cup muffin tin with parchment cupcake liners or grease with coconut oil. I prefer the grease method since I have no papers on me.. hehe. ;) You then fill each cup with a spoonful of granola mix, making sure to pat down gently. Once completed, you'll want to sweeten your Greek yogurt, or not. Your call. But if you are, simply mix in your sweetener of choice, making sure not to over stir, and dollop some in each cup.
Now for the pretty parts, take your fresh or frozen berries of choice and roll into coconut sugar. This will give your bites some yummy textures and some added sweetness.
Finally, cover your muffin tin with plastic wrap or parchment paper and freeze until firm, generally a 6 hour process.
These bites are perfect to prep the night before so you can enjoy some refreshing medibles on-the-go the next day. I hope you enjoy them as much as I do.
